This morning being Valentines day, although being a bit commercialised it's about sharing the love, I shared some love with family and shared some love with friends. It was just great to see the appreciation they had for their small little gifts. I just made each one something small. This made me realise that I actually need to do some more of this loving throughout the year.

Taking things for granted, by becoming a little more aware of your surroundings, its amazing really. Just this morning I realised we have a beautiful garden where we work, and I took some photograph s. Afterwards I realised this did my bucket list proud.

So from me to you have a great sharing the love day.

Photographic Challenge

I've gIven myself a challenge this year, and that is to take at least one photograph every day or try to that means something to me. I am challenging myself to look at things and every day differently from drinking coffee in the mornings to venturing outside and see what life throws my way.

I've made myself a bucket list of photographs I would love to take. different themes to delve into, to explore, to create.

I am very excited about this prospect and will keep you posted on my progress.

This morning was such a luvable morning, one of my friends brought some red velvet cupcakes with cream cheese. Needless to say I want the recipe and it was my first time ever having one. Can you imagine. I can't think that I've gone through life so far, minus these. A total adventure.

Low and behold in my little stream a little video came up on how to fold a origami heart. So gailo and I just had to make one. Through a couple of pauses, lotsa laughter our little heart was made with lotsa luv. Brings to mind luv and laughter does make the world go round. So this is a little prep from me to you so if I can have my very first velvet cupcake and make my very first heart. So can you, the possibilities are endless.

Authentic Self

This year although I promised myself no New Years resolutions, one of the items on my bucket list for my life is to be more authentic. In essence being authentic towards myself and others. It's challenging as one's gut reaction always seem to be protective towards that space surrounding oneself and thereby not always open towards new experiences, new adventures and life in general. Sometimes you don't want to take on new adventures as you think what would the cost be towards myself, albeit emotionally, physically or sometimes in money form. Sometimes a thought would cross my mind as in I would love to do this or be creative and then your other side of the brain speaks to you and say no, your not good enough,others are so much better at this, just let go. To be truthful a person ends up with that dissapointment within yourself. That's why this year I'm going to explore that part of me that is usually very cautious and tend to say no. This year I'm going to explore what happens if I say yes and give this creative side of me a chance. I'm going to give myself a chance to dream this year and I'm actually super excited about the prospect.

I've decided this is the year I'm going to explore that other self of me, the side that's creative, the side that wants to burst out of that bubble which has been in containment for most of my life. I love all things creative and have done one or two creative courses. This for me is a different path. At the beginning of the year I've given myself the speech which said - you are not having any absolutely none / nada new years resolutions as in the past a person make so many, when push comes to shove, that's where it stays on the mantle shelf gathering dust. This time I've decided come what may, I'm getting off my bum so to speak and it's going to be a doing year for me. None of this sitting on the shelf gathering dust. So the pep talk I've had with myself was it's going to be a process and I would love to see where it would and could lead me. One thing I can say is I've always loved design, checking out new designs in whatever format and getting inspiration which usually ends up only being in my head. This time around I'm going to take those images which usually float around in my head and give it some scope on paper. Basically going to do some exploring and see where this process will lead me. I might not be that good or I might be brilliant at it. Who knows, this year its going to be a DOING year and not a sitting on the shelf year. In this way by putting myself on paper I'm going to hold myself accountable. It might be quite a bit of the good the bad and the ugly. Like I say, who knows. In the doing I did get myself a nice little book and a few paint brushes with a couple of dabs of paint. So here goes........

Karoo

This is what happens when you lock yourself out of heart and home. You have a few friends for company with compliments of the Karoo Coffee Shop and then you contemplate and put your thinking cap on, for all those new years resolutions you did not make. Then again that's what I told myself a couple of minutes ago and I'm already on point 8. Working on a bucket list of all the things that I still want to do and see this year.

A start to a brand new year, albeit going into February. Just came back from a months leave doing and travelling all around the Western Cape. It's actually nice to be home for a change. The word home is were your junk is comes to mind. Nothing like your own bed, cushion and everything that goes with creature comforts. With all these travels my creative juices got a bit pumped up and I started a sketchbook. So here's a sneak peak of some of my drawings. As another saying goes life is a work in progress, so is my sketchbook. Enjoy.

They say a change is as good as a holiday and one of the first items we decided to change is our bedroom. On the to buy list was a bed and I found one. I just think a sleigh bed is one of those classical items you can upscale in so many different ways. I can't wait to get going on the bedding. I'm thinking of painting one of my walls a dark green and the other chocolate brown. I love colour and these would definately make a statement.

Crockery- the ultimate in style

When I saw the crockery by Liesel Trautman in an old Garden and Home magazine I just got so inspired. Letting my fingers do the walking through her gallery on her website just made me drool some more. She just has something for everyone. From the most classic styles to some trendy stuff. So far I've been an armchair drooler and needless to say I'm definately going to make a Saturday out of this.

Mixed Tossed Tomato Salad

Main Ingredients

6 roma tomatoes, cut into wedges

2 cloves garlic, sliced

1 packet cherry tomato, (300g), halved

1 red onion, finely sliced

250 ml basil leaves

1 glug olive oil, for roasting and dressing

1 glug balsamic vinegar, for roasting and dressing

1 pinch salt and milled pepper

Preheat oven to 180ºC

Toss tomato wedges and garlic on a roasting tray with a glug of oil and vinegar.

Roast for 15 minutes

Drizzle over pan juices add a little more olive oil and vinegar

Season and Serve

Design your own bookshelf

De Waal Art has the nicest idea if you want to design your very own bookshelf without the "books". Instead of your bookshelf taking up space, this is such a lovely idea of creating a bit more space.

The ideas are endless with this. I'm actually thinking of doing this in one of my bedrooms. Paint the one wall with chalkboard, surround the wall with a few of these nice little bookcases around.

With this I can put a daybed against the one wall, with mwa's scattercushions all about. Definately a project in the making.

The first time I got to know Recreate was at a Design Indaba in Cape Town. It was the first stall I saw when I walked in at the show and the last I went to before I left. Recreate totally bowled me over and I walked away with a ton of ideas and pictures in my mind. I just could not believe what they could do with old/used furniture.

Recreate uses pieces of discarded junk and by recreating, creates a unique, recycled range of furniture, lighting and interior accessories. Each furniture piece keeps its own character but with a new function, so a suitcase becomes a chair. A scale a clock, something useful that can be used and is extremely fun to look at and be part of.

Kirstenbosch Gardens is one of the world heritage sites.

We took the kids and (myself) hiking. Boys will be boys and they definitely took to every nook and cranny. This was such a wonderful way to rejuvenate those batteries. So if any of you are ever in our little Valley, this is just one of those places to visit, a must see on any bucket list.

It is very easy to get caught up in daily life. We often look and concentrate on other people's moral values that we don't live by our own.

For a start write down a mission statement you would want to live by. Live your life every day as the gift it is. Keep your values close to your heart. Read through your mission statement regularly to remind yourself to live your life with energy and focus.

Enjoy Life the Litsje Way

We all go through some stressful moments. We can't always control what happens to us, yet we can control how we respond to the situations. So how do we do this :

We need to stay optimistic even though we can't seem to see the reason why. What we need to do is look at the situations which present us with it's negativity and have a complete mind shift and see the problem in a positive light. By looking at a problem in a different perspective enables us to feel hope in the situation. In turn we need not have our lives turned around by negative people as their negativity would in turn control you.

Invite a few friends or family over. This doesn't have to be expensive. Have a movie night, rent a few movies with popcorn. Friends and family both love these movie nights. If you spend to much time with yourself, you could just start to feel extremely sorry for yourself and that is never good.

If you have a garden, create a small place to just sit and state if you are in need of that quiet time, if you don't have a garden, create a potted garden on your patio. Spending time with nature lifts any person's spirit.

Live for the moment. Don't feel guilty when you sit in your favorite coffee shop having that espresso reading that all important novel in your lunchtime. Take a break, refreshers are good for you and will give you a boost, as this in turns lifts the spirit and your family would love you. Don't lose focus. Focus on your family, your friends, your life, your love. Remember everything happens in their given time.

Best friends are their to support and guide you. Albeit it's best friends I'm talking about. If you need to talk, it's never as good as a best friend putting things back into their rightful boxes. Other people's insights to situations are sometime a bit different than your own, and they might just be able to solve your biggest problems.

A final note for the day, experiences do not cost money, walking in a garden, swimming in the sea, these are the experiences we remember. The material way of spending money is very fleeting, you can only find joy in buying that hairdreyer once and it's all forgotten, yet now smelling that fresh sea breeze, forest, that's what memories are made up of.

Homemade Marshmallows

For a great gift to make for friends and family and it's quick is homemade marshmallows.

It is much easier than what you think.
All you need is ......

3 packages unflavored gelatin
1-1/2 cups granulated sugar
1 cup light corn syrup
1/4 teaspoon salt
1 Tablespoon pure vanilla extract
Confectioners' sugar for dusting

What to do :
Combine the gelatin and 1/2 cup of cold water in the bowl of an electric mixer fitted with the whisk attachment and allow to sit while you make the syrup.

Meanwhile, combine the sugar, corn syrup, salt, and 1/2 cup water in a small saucepan and cook over medium heat until the sugar dissolves. Raise the heat to high and cook until the syrup reaches 240 degrees on a candy thermometer. Remove from the heat. With the mixer on low speed slowly pour the sugar syrup into the dissolved gelatin. Put the mixer on high speed and whip until the mixture is very thick, about 15 minutes. Add the vanilla and mix thoroughly.

With a sieve, generously dust an 8 x 12-inch non-metal baking dish with confectioners' sugar. Pour the marshmallow mixture into the pan, smooth the top and dust with more confectioners' sugar. Allow to stand uncovered overnight until it dries out.

Turn the marshmallows onto a board and cut them in squares. dust them with more confectioners' sugar.

It makes about 20 to 40 marshmallows depening on how you cut them. You can use cookie cutters to to your thing.

All in all it takes about 30 minutes to make and the cooking time about 5 minutes.

Again this is so easy to make, the kidz luv this and it is such a grownup recipe too. I sometimes put a bit of vanilla essence in the mix. I love vanilla essence.

What to do, what to do. Went to Cubana for lunch today (again). I'm starting to love these Fridays. This afternoon we went for a drive to Helderberg Nature Reserve, took some stunning photos which I will share shortly and from there went to Strand for supper.

Let's start at the very beginning. I love food, I love to cook and love to entertain. I love shoes too. When I do entertain I like to try new things and am always in search of the next perfect recipe. I love designing, looking for the next quick fix, shortcut, that thing that makes life just a bit easier.

Kindly note I am not a Five Star Chef where I measure everything to the T. Mostly it's Jamie Oliver style. In this blog I will be sharing my own personal recipes and with it share some photos while doing it.

Being a step-Mom to a few teenagers and the only thing they can think of is food. My current motto is the simpler the better. For that matter the quicker the better.

Just this weekend we stayed in in a chalet in Porterville next to the mountains, BLISS. If you should ask me what I did for the weekend, I can proudly say nothing. The guys did the bike, quadbike and walking thing, me I was a total couch potato, lost in my latest little Ghostwalker novel by Christine Feehan which I got for a bargain price at Bargain Books. Just now and again lifting my head enjoying the view, taking a sigh....., thinking of the next meal.......

I started the weekend off with my latest invention called the Tuna Supreme ala Porterville Style. If you only have a two plate stove, two pots and one hour to fill those hungry tummies, then this is the meal for you.

Your ingredients :

1 packet of 500g pasta (macaroni, wheels) anything that looks pretty.

2 tins tuna (water not oil)

1 tin whole corn

200g cheese cut in small blocks

1/4 onion finely chopped

1/4 red/yellow/green pepper

1 packet green salad/rocket shredded

For the sauce, cup mayonnaise

The Method :

Follow the instructions on the packet for the pasta,drain and cool off.

In a separate bowl drain the tuna chunks, whole corn and mix. Chop the onion, green peppers, cheese into the mix. Mix the mayonnaise into the tuna mixture. After the pasta has cooled off mix the tuna mixture into the pasta. Add the shredded green/rocket into the pasta mixture. Season with salt & pepper. Toss once or twice. Add a few shredded leaves on top to make it look all dolled up. Presto, a meal under a hour and this is a total teenage friendly dish.

The new information bill is extremely worrying. Personally for me freedom of speech, freedom of the press is one of the fundamentals of any democracy ~ especially for South Africa. To take away that freedom of the press constitutes going back twenty years. All the hard fought freedoms over the years becoming null and void. What this bill means is that anything said about the government needs to be sensored and approved by a Board. Read more about it here.

Heritage Day

It was Heritage Day in South Africa. We took the kids for a drive. It’s amazing to think that there is only a ten minute drive between where we live and nature. It’s like driving through different time zones from us to the beach. We decided to take the kids to the beach yesterday for some fun. Wow, did they decide to have fun. Just have to tell myself not to think about the car, sand, sand the car and to let go. Again, the kids grow up so quickly so all these small little moments are banked down in the memory books. The middle one, with his face in the sand decided he wants to go into photography and that's what he wants to do. This is the child who never wanted to have his photograph taken ever, or wanted to even be in a picture ever. Now it's like I want to do this, let's try this and the funny is now I'm his permanent model.

We had great planning. Having our wedding anniversary the day before hubbies birthday. It was just so joyful having friends and family over to celebrate those special days. What was nice for me is I could take out all those dinner plates dress them up with yummie goodies. Even my clivias are in bloom.

With the kids moving out this has given me the opportunity to re-invent their bedroom. Making it weekend friendly and turn it into a guestroom. I'm thinking of moving away from all the blues associated with boys and going for green, all light and breezy, the colour I associate with new beginnings. For the kids it would be great as when they come and visit it would feel all newy.

I had a couple of ideas and are looking at working at putting all of these into one bedroom. Quite a task as now I have to put that thinking cap on as to themes, what are the likes and dislikes, what I really want in the room and what not, what has to go and what has to stay.

These are the rooms I'm inspired by at the moment.

We had a ladies tea at the Polo Club. What fun. It was so nice just to get together with all the ladies and chat about life, children, work, husbands and everything inbetween. The theme was spring. The beginning of new beginnings. The tables was set in all these lemony colors which got me totally excited about spring. Elize Parker talked about the gerberas in one's life. That we shouldn't let life get us down, yet be excited about what is happening all around us.

For the next couple of days I'm going to chat about what is needed in a kitchen. What is it one really would need to get those creative cooking / baking juices flowing. So today I'm just going to list all the requirements and in the next couple of days we'll go through what everything means. This will give us all a chance to settle in for trying out all the wonderful recipes to follow.

Knives
Chef's knife. A weighty blade for chopping or slicing.
Serated knife. To use with slicing bread and tomatoes. Worth the investment.
Carving knife. A thin flexible blade for accurate carving.
Paring knife.

Pots and pans
Skillet (25cm), with a long handle and sloping sides
Saucepans, 1 and 1.5 litre, with tight fitting lids
Saute pan, (25cm), straight sided, heavy-bottomed pan
A large stock pot for making soups and stews

Appliances
Blender, inexpensive, purees everything from milkshakes to soup
Electric mixer, heavy duty
Hand held mixer
Kitchen scale

Colander, for draining and straining

Cutting board. Best to get one board for meats and another for fruit and vegetables, otherwise always be careful to use one side for meats and the other for fruits and vegetables.

Measuring cups for dry ingredients

Mixing bowls (You can get them in stainless steel, ceramic or glass. I prefer glass but they are all good. I don't think you can ever have too many mixing bowls and I like them in different sizes, from small to big. You can usually find find sets that fit into one another for easy storage.)

Round cake pan (own choice) - I have two.
muffin tins - small and large (good enough for cupcakes)
Cake or baking dish (own choice)
Pie plates
Pans come in aluminum, non-stick metal and glass and are all good. Use non-stick for your muffin tins and cake pans but avoid them for pie plates since the non-stick surface will get scratched when you cut the pies. Generally speaking the heavier the pan the better it is.

Baking sheets
2 baking sheets with or without rims. Make sure they are solid enough not to bend when you hold them.

Other baking essentials
Set of dry measuring cups
Rolling pin
2 wire cake racks
Cookie cutters - various shapes and sizes
Toothpicks for testing doneness of baked goods

Cleanup and storage

Onion and Cheese Quiche

Ingredients
For the pastry:
110g self-raising flour
50g butter
A pinch of salt
25g grated parmesan cheese

For the filling:
225g onions,sliced
1 teaspoon butter
1 teaspoon oil
110g Swiss cheese, grated
225ml single cream
2 large eggs
salt and freshly milled black pepper

Pre-heat the oven to 180C. You will also need a 19cm flan tin, greased. To make up the pastry: sift the flour and salt into a mixing bowl, sprinkle in the parmesan then rub the butter in until the mixture becomes crumbly. Then add enough cold water to make a dough that leaves the bowl clean. Place the dough in a polythene bag and leave it to rest in the fridge for half an hour or so.In the meantime, melt the butter and oil in a frying-pan, add the sliced onion and cook over a highish heat, stirring now and then, for about 15 minutes until the slices have softened and charred round the edges. Then roll out the pastry to line the flan tin, prick the base with a fork and bake in the centre of the oven for 15 minutes. Beat up the eggs (for the filling) and use a little of it to brush the inside of the pastry case, then return it to the oven for a further five minutes. Now spread half the grated cheese over the base of the flan followed by the charred onions. Spread the rest of the cheese over, whisk the beaten egg with the cream and some seasoning and pour over the top. Return the tart to the oven and bake for 30-40 minutes, until the filling is puffed up and golden brown. Then remove it from the oven and allow it to settle for about 10 minutes before serving.

Tshwane Mediaeval Fayre

This might be interesting.

The first Tshwane Mediaeval fayre will be held at Thswane events centre (Pretoria showgrounds) on the 25th and 26th of April 2009. Over two days the fayre will be hosting a full contact armoured tournament with 12 fighters from around the country. There will be a tentpegging competition and displays of military skill on horseback. Stunt shows will be performed on both days. A mediaeval village will have displays of olden day crafts such as blacksmithing and armoury. There will be a mediaeval type flea market, good food and a beer tent.

Cheese Festival

The South African Cheese Festival will be held on between the 24th and 27th of April 2009. The venue will be at the Bien donne farm between Paarl and Franschhoek. The cost will be between R85 and R110 per person. Kids under the age of 12 are free and pensioners only pay R65 for any day.

A variety of cheeses will be on display. There will be a market as well as a few cooking demonstrations for those who are a bit cullinary challenged.

The History of Aprons

I don’t think our kids know what an apron is. The principal use of Grandma’s apron was to protect the dress underneath, because she only had a few, it was easier to wash aprons than dresses and they used less material, but along with that, it served as a potholder for removing hot pans from the oven.
It was wonderful for drying children’s tears, and on occasion was even used for cleaning out dirty ears. From the chicken coop, the apron was used for carrying eggs, fussy chicks, and sometimes half-hatched eggs to be finished in the warming oven. When company came, those aprons were ideal hiding places for shy kids.
And when the weather was cold, grandma wrapped it around her arms. Those big old aprons wiped many a perspiring brow, bent over the hot wood stove. Chips and kindling wood were brought into the kitchen in that apron. From the garden, it carried all sorts of vegetables. After the peas had been shelled, it carried out the hulls.
In the fall, the apron was used to bring in apples that had fallen from the trees. When unexpected company drove up the road, it was surprising how much furniture that old apron could dust in a matter of seconds. When dinner was ready, Grandma walked out onto the porch, waved her apron, and the men knew it was time to come in from the fields to dinner. It will be a long time before someone invents something that will replace that ‘ old-time apron’ that served so many purposes

Harvesting your Herb Garden

Do not cut herbs at random. Take the opportunity to pinch out or prune the plant at the same time, removing unwanted shoots and encouraging bushiness.Use a sharp knife or scissors, do not break, bend or tear off the branches.
Always harvest from clean, healthy plants in peak condition
The optimum time to harvest herbs is in the morning, after the dew has evaporated, prior to the sun warming their leaves.
Handle the herbs gently without bruising or injuring the leaves and stems.
The distinctive oils that give herbs their aromas and flavours are volatile and can be destroyed if injured.
Select just enough herbs to be used, dried or frozen, the same day. Herbs should look healthy, fresh and clean, with out any type of discolouring.
Since the flavour and aroma of herbs deteriorates quickly after picking, be prepared to use them immediately.
If you must store them for a few hours, keep them in the refrigerator in a plastic bag that is perforated and can breathe.
When you are ready to use them, wash the herbs gently under cool, but not cold water and pat dry between paper towels.
Freezing fresh herbs is an easy way to store them for longer periods of time.
Clean the herbs delicately, blot them dry, and remove leavesfrom the stalks. You can freeze them whole or chopped, packing into freezer safe bags or airtight containers.

Caring for your herb garden

Water newly planted herbs regularly but once they are established, they are naturally drought resistant.
Watering and drainage goes hand in hand. Rather give your herbs too little than too much water. After a good soaking, allow the water to drain away and the soil to dry off. Water again when the top 2 or 3 cm of soil is dry to the touch.
Mulch your herbs once a year with bulky organic material, such as shredded bark.
Fertilizing is very important, especially if you intend to use your herbs on a regular basis. During the growing season fertilize at least once a month. During the winter months one or two doses will be sufficient. Use any balanced fertilizer like 2:3:2.
Always half the dosage given on the packaging. The reason for this is that the essential oils of herbs that ‘suffer’ a bit are more concentrated, increasing their flavour, aroma and medicinal value.
If your herbs get too much fertilizer they will grow scraggly and be more susceptible to pests and diseases. Do not use artificial fertilizer - Use organics.
Pruning is essential to encourage healthy, bushy growth. Remove dead leaves and flowers on a regular basis. Should you frequently use your herbs, pruning may not be necessary as you would be pruning automatically.
Re-pot them yearly with fresh soil
