6 roma tomatoes, cut into wedges
2 cloves garlic, sliced
1 packet cherry tomato, (300g), halved
1 red onion, finely sliced
250 ml basil leaves
1 glug olive oil, for roasting and dressing
1 glug balsamic vinegar, for roasting and dressing
1 pinch salt and milled pepper
Preheat oven to 180ÂșC
Toss tomato wedges and garlic on a roasting tray with a glug of oil and vinegar.
Roast for 15 minutes
Drizzle over pan juices add a little more olive oil and vinegar
Season and Serve
