Guagamole

Originally from Mexico, Guacamole is an avocado dip and side dish that has become very popular throughout the rest of the world, perfect to eat with chips, on a baked potato or on some bruschetta. Starting with a few simple ingredients there's no end to the possibilities and the incredible recipes that can be enjoyed. The trick to perfect guacamole is using good, ripe avocados. Check for ripeness by gently pressing the outside of the avocado. If there is no give, the avocado is not ripe yet and will not taste good.
To extend a limited supply of avocados, add either sour cream or cottage cheese to your guacamole dip, add to the mix, including salsa,. You can also add many ingredients like jalapeƱo’s, salsa, cilantro, onions and fresh garlic.

Guacamole

2 medium Ripe Avocados halved, pitted, and removed from peel1- 2 tablespoon Fresh Lemon Juice 1/2 cup Chunky Medium or Hot Salsa (Recipe below)1/8 teaspoon Sea Salt

1. Sprinkle avocado with lemon juice.
2. Mash avocado with fork.
3. Fold in chunky salsa and sea salt.
4. Refrigerate until serving.

Fresh Salsa

4 cups Tomatoes, diced3/4 cup Red Onion, finely diced1/4 cup Red Wine Vinegar1 Jalapeno or 2 Serrano chilies, seeded and minced1/2 cup chopped Fresh Cilantro1/2 teaspoon Coarse SaltPinch of Cayenne Pepper, to taste
Mix all ingredients together
